This year’s release showcases rye and the complexity it delivers by starting with a rye imperial stout and aging it in freshly emptied rye whiskey barrels. After aging in barrels for a full year, the stout is then finished with incredibly aromatic madagascar vanilla beans. Bourbon County Vanilla Rye Stout has the beloved attributes of the vanilla variants before it–with a new characteristically rich spice character from aging in the rye whiskey barrels (14%)

Notes: Another beer that was much too good to leave dormant! We love to link our beers here at Polly’s, and 58bpm is a continuation of this trend.
A distant cousin of our insanely popular Circadian Rhythm; which in itself was named for the brewer’s disturbed sleep patterns from their 7am to 8pm work days. 58bpm is a reference to the metronome used by one of our brewers to help them get a decent night’s sleep after a long day at the brew kit.
An almost identical hop bill to Circadian Rhythm of Citra, Simcoe, Mosaic and this time Azacca, albeit this time charged up to 23g/l in the dry hop; this is a DIPA of insane flavour intensity – expect stone fruits, mango, pineapple and just a hint of grapefruit throughout. (8%)
